Chopped Food Recipes 2023

Each pepper groups recipe!

Chopped food challenge has begun! Today, campers cooked their recipes and presented it to the four judges to score. It was so fun seeing them work together to create a yummy dish.

Here's each pepper group's recipe 

Yellow Peppers: Mini pot pies 

Ingredients:
Pillsbury pie crust
Peas
Sweet potatoes 
Carrots 
Cheese
Butter
Flour
Sage
Directions: 
1. dice veggies
2. fill muffin tray with pie crust
3. combine cheese, butter and flour until sauce is desired consistency. Add Sage to taste.
4. add veggies + filling to muffin tray
5. bake until golden brown and enjoy! 

Orange Peppers: Fried Rice

Ingredients: 
Parsley
Sweet peppers
Carrots
Soy sauce
Rice-long grain
Garlic butter
Garlic
Salt/pepper
Cumin
Directions:
1. wash rice then combine garlic butter and garlic in a pan.
2. start cooking the rice, as that's cooking, dice onion, carrots, sweet pepper and combine into a pan.
3. add cumin once all ingredients are cooked, then add soy sauce and stir everything until it's cooked
4. place to serve and enjoy!

Red Peppers: red pepper boats

Ingredients:
Rice
Red mini peppers
Veg. cheese ( you can use regular cheese too)
Jalapeno
Tomato
Basil
Taco seasoning
Garlic
Sweet onion
salt and pepper to taste
Directions:
1. clean veggies and make rice in rice cooker or on a stove top
2. Dice tomatoes and onion, chop jalapenos amount to taste
3. cut red peppers in half, clean out
4. Sautee onions, tomatoes and jalapenos
5. mix rice with veggies to fill red peppers. Top with cheese, s/p
6. Bake stuffed peppers at 350. Add basil as a garnish to taste. Enjoy!

Green Peppers: Pizza

Ingredients:
taco sized tortillas
1 large tomato 
1 red bell pepper
1 jar of black olives
basil (fresh)
salt and pepper
Oregano
garlic clove
3-4 bags of vegan cheese (regular is fine too)
1 can of black sliced olives
Directions:
1. clean and chop tomato and red pepper into 2inch chunks
2. peel garlic clove
3. cut green pepper into topping sized pieces
4. puree red pepper, tomato, 1/2 squished garlic clove, and basil leaves in food processor
5. assemble tortillas, homemade pureed sauce, vegan cheese, green pepper pieces, olives and oregano to taste
6. bake in oven for 5 mins or until cheese is melted.
