Ingredients
- 6 whole wheat (or multi-grain) English muffins (halved)
- 1 large bell pepper (chopped)
- 1 cup BBQ sauce
- 1 ½ cups cooked chicken (shredded)
- 1 cup reduced fat cheese (shredded)
Instructions
- Preheat oven to 450 degrees Fahrenheit. Gather and prepare ingredients.
- Lay the English muffin halves on a large baking sheet and spread the BBQ sauce evenly on each half.
- Spread the remaining ingredients on the muffins, ending with the cheese.
- Place the baking sheet in the preheated oven. Bake for 8-12 minutes or until cheese is melted.
- Remove from oven and allow to cool for a few minutes before serving. Enjoy!
