CA, DCA, and 1-MCP: Storage duration and aroma recovery in apples

The aroma produced by apple provides identity and value. Here we learn that the storage environment influences aroma production after the fruit is removed from storage. The most impactful influence is time in cold storage, with many cultivars losing aroma production capacity as storage duration increases. Controlled atmosphere (CA) storage and 1-MCP reduce aroma as well and dynamic CA has the potential to suppress aroma slightly more than CA.
