Professor Jaspreet Singh joined Massey University in 2004 and is currently Professor of Food Technology at the School of Food Technology and Natural Sciences. His internationally recognised research in food microstructure, starch chemistry, potato processing, alternative (plant) proteins and sustainable food innovation has delivered major outcomes for New Zealand and multinational companies, including Goodman Fielder, Heinz-Watties, Zespri, PepsiCo, Simplot, Ingredion, and Ajinomoto. His work contributed to New Zealand’s first low-carb commercial potato variety, commercialised through industry partnerships, and his research led to a patented hybrid meat-analogue technology. He has published over 200 outputs, received more than 15,000 citations (H-index 56), and has been listed among Stanford University’s world’s top 2% scientists from 2022 to 2025. Professor Singh has secured major competitive and industry funding, supervised numerous postgraduate researchers, and is currently serving as chief editor and editorial board member of international journals, and holds visiting appointments across Asia. His research also advanced international recognition of Māori Taewa potatoes.
