Sarah Eichberger
Sarah Eichberger, MPH, RDN, is a public health nutritionist with more than 20 years of experience advancing public health nutrition and food systems at the state and community levels. As an Extension Educator with MSU Extension’s Health and Nutrition Institute, she provides statewide leadership for nutrition and physical activity initiatives that promote healthy eating and active living. Her work advances policy, systems, and environmental change strategies that improve nutrition security and strengthen the systems shaping food choices where people live, learn, eat, and play.
Prior to joining MSU Extension, Sarah worked with University of Minnesota Extension, where she supported community and public health efforts to improve healthy food access and prevent chronic disease through farm to school and local food systems initiatives in the Twin Cities and statewide. She also has experience as a Refugee Nutritionist with the Chicago-based nonprofit Heartland Alliance and in Women, Infants, and Children (WIC) and maternal and child health programs within federally qualified health centers in Grand Rapids.
Sarah has a bachelor’s degree in dietetics from Michigan State University and is a 2012 graduate of the University of Minnesota School of Public Health, where she studied nutrition with a concentration in health disparities and served as a Maternal and Child Health Fellow.
