Case Study: Growing a More Inclusive Muskegon County Food System

Lakeshore Flavor is a non-profit organization that offers education, investment, and community support to food entrepreneurs in Muskegon county, Michigan. 

This case study report shares the findings of a series of listening sessions conducted by the Lakeshore Flavor, with the support of Michigan State University, to support the development of an incubator kitchen in Muskegon county. These listening sessions were hosted to hear from residents and other stakeholders on how they interact with the food system as consumers, producers, entrepreneurs, and public health employees. Additionally, responses from participants were used to characterize areas of inequity within Muskegon’s food system, as well as identify ways to improve inclusivity and participation from underrepresented community stakeholders.  

The listening sessions and this report were funded by the Community Foundation for Muskegon County.
